    Dog bones

We ordered a side of beef this year. The ribs they packaged are really too skinny to do anything with (except make broth out of) so I thought I'd use them as dog treats. Is there a process I need to follow? Dry them, cold smoke, etc? Hesitant to feed them raw because I don't want remnants left...

    Best Pellet Brand?

I have had excellent luck with Lumberjack Pellets. Traeger and some of the others are oak or another hardwood with oil added to give it the different wood flavors. Lumberjack pellets are maple if you order maple, cherry if you ordered cherry etc.

    Iowa Cheesesteak Delights

Looks great!! Made this Minnesota Cheesesteak on my Blackstone griddle last week. Onions, peppers, ribeye steak with bacon ends and pieces mixed in, white american cheese to top it. Used the Chupacabra Brisket Magic seasoning. Was the best I've had to date.

Smoked Kielbasa - Rendered fat under skin/casing? Sausage newbie (Updated thread title)

Have you verified your thermometer is correct? Test it in a cup of ice water and a pot of boiling water to make sure it is reading close. Fat out is most certainly from getting it too hot somewhere during your process. Masterbuilt and other electric smokers have wild temp swings built in to...

Thanks everyone. I think showing her this thread may help lol.

    Knives in dishwasher

Something I copied from the Google: Dishwasher detergent is very abrasive, and along with the banging around that happens during a wash cycle, will take the sharp edge right off your knife. (Plus, it's not safe for the person unloading the dishwasher!) Always wash knives by hand in the sink...

    Knives in dishwasher

I have a few good quality knives and quite a few not so great quality knives. I've always had a rule against putting any of my knives in the dishwasher. It will knock the edge right off and even ruin a knife. How do I convince my wife that we should only be hand washing? She thinks shes being...

New member and needs help with busted electric smoker. PID???

I think I may have it figured out. Had to leave for work before final testing. I think the problem may have been the wiring to the snap disc. I removed the back and ran high temp oven wire. I wasn't paying enough attention when removing the factory wiring and ran the hot lead from the relay to...

New member and needs help with busted electric smoker. PID???

Scratching my head. I converted mine and completely gutted all Masterbuilt wiring. Even rewired the snap disc in the back. When I plug it in, it goes through a test, then says 1p on the display. The alm light is lit and the pid is unresponsive. Won't do anything when I push buttons. I read...

    pellets and smoke quality

I open the vent all the way, completely remove the chip tray (inside) and the loader tube. I live in Minnesota, so humidity isn't really an issue, but as others stated; I've seen other forums saying to vac seal your stored pellets and microwave before using on a paper plate if they are still a...

    Sous Vide recommendations

I have the Anova and it works flawlessly and couldn't be easier to use. Joule is more expensive, but has a better app (if you plan on using the app)

    Instant Pot

I have both, and the stovetop pressure cooker sits unused on a shelf in my garage now. I actually like the ability to "set it and forget it" I've never gotten an error code on my instant pot and have had far fewer food failures with it than I did with the stovetop unit.

MN Members; I need some assistance.

One of my smoking buddies did a bunch ahead for a grad party. He reheated with a sous vide circulator and just took another bag out of the water bath whenever the crockpot needed to be refilled.

    Summer Sausage finishing question

Last batch, I used a Nesco turkey roaster filled with water. Took the sausages directly from the smoker into the water bath. Only took about 20 minutes to finish. Then I hung the sausages in the garage overnight to dry, then packaged and froze.
