Alright guys, the day is finally here!! My LSG vertical smoker arrives Wednesday!! I have a Boston Butt and a rack of spare ribs untrimmed sitting in my freezer waiting to take a smoke bath. Which one should I do first??!!?

Thanks dirtsailor! Everything went well and tasted great. I stuck a few of the vegetables right at the end so I have a little bit of carbon to scrub off. I'll put a proper seasoning on it next week.

Dang DS, that Thai pork jerky sounds amazing! I've got a lot of work ahead of me on my jerky bucket list. Hopefully I don't burn out the element on my dehydrator before I finally decide on a smoker!
Hey guys, I've been reading a lot of threads on here and see that most of you guys who have posted recipes are using cure #1 for your jerky. This has me thinking about the reason why.
For almost 20 years I've been making jerky with my father and our process just involves marinating overnight...

I've sent an email to him asking for a few pictures of the inside of the firebox and will see if he's up for negotiating. In the meantime, I'm thinking of redneck engineering a charcoal basket for my Triton and trying a smoke using the Minion method.
