    what IT do you guys go to for brisket pastrami? I've had a flat curing for a week. Gonna smoke it next weekend. Do I smoke to an IT of 190-200 like if it wasn't cured?

    I'm gonna try the MES 40 and AMNPS combo. I will do some mods to my Brinkmann and hopefully will have better luck with the charcoal. If things go well with the coal, I may look for an upgrade over the Brinkmann in the spring.

I'm looking for my next smoker and not sure what to do. I want a pellet grill, but I feel they lack the square inches without spending a ton...
