    I basically followed this. ended up taking a bit longer to smoke because i used much bigger onions, and i should have hollowed them out just a little more. also i used pepperjack cheese , and that was a nice touch. they turned out amazing.  and obviously i love cheese a lot more than this guy.

    Today I decided to smoke some meat that takes a little longer to cook than what I've been doing. I did a pork belly and some massive stuffed onions. Turned out very good and everyone loved it. I'm really getting hooked on smoking.

    We are about an hour or so away from ours, but we go twice a month and stock up. It's not to bad of a drive for us. There isnt much on the mountain. So every two weeks we go down the hill and buy stuff we need.. So we would be making the trip anyways.

    They turned out great!! A little to spicy for my fiance, but everyone loved them. it took me a little work keeping the temp right, but i was able to do it!

    Ok so this is my garage freezer. The top shelf is hog meat. The bottom (deep red meat) is ram.  Lets see your recipes. Because i need to ether buy another freezer before bear, and deer season. Or i need to start doing alot of of cooking! id rather cook it! Anyone got any good recipes?

    Im starting to worry a bit. Today there are cold winds blowing pretty strong. hopfully they die down. or it will be tough to cook.

    This is my current freezer situation. More in the freezer in the house, and bear season starts in august. so i need to start cooking more
