First smoke on the Camp Chef and it’s 4degrees here. I used a packing blanket on the lid and the temps are holding between 215-240 degrees. I know some folks swear by the welders blankets to hold in heat as well. Good luck!

Got my new Maverick yesterday and did a butt overnight. There seems to be a 30 degree difference between the MES and Maverick (733 reads lower). Has anyone else experienced this?? Meat probe is only 3 degrees off. Probe is clipped right next to the meat.
Great looking bird!! I put my AMNPS all the way on the bottom to the left (as your looking at it) of the heating element right under the drip pan. I've smoked just about everything in my 40" MES and have had ZERO problems with the AMNPS in that spot. Just a suggestion.

Hey everyone! I had a question about the racks in the MES 40. Most of the post have you put the meat on the top two racks. Can you cook on all five racks? If so, do you have to rotate the racks for even cooking? Just curios
First pork loin in the 40 MES. Wrapped it in bacon and used applewood. Turned out awesome!! 240 until IT was 145. Wrapped for 30 min. Melts in your mouth!!
