This was simply a bad piece of meat. Full of fat that we didn't see when we bought it. More cooking would have resulted in a well done bad brisket.
Got another one from a different store later that week and it came out fine. Sometimes you just get a junky chunk of brisket.
Windy but mild here. The rain and fog blew out about 10 am. Smoked a brisket in the new Masterbuilt yesterday. 14 hours but the meat was awful. Not the smoker's fault, just a bad brisket. Next time, no meat market HEB sells a nice brisket.
Going to try wings this weekend.

Got an email from Masterbuilt today. Turns out there are two versions of my second gen smoker. The instruction book detailed how to sync with, you guessed it, the one I don't. Followed their video and all is right with the world. First smoke tomorrow.
Just unpacked a new Masterbuilt smoker to replace my last Bradley which finally bit the dust last week. Second Bradley we have had but we really abused the first one, dragging it around in the back of our truck while we were full time RVers. This one lasted many years but gave up the ghost...
