    Lamar I know its been awhile sorry it took so long. I was down with a bug for almost a week. I finial got back to the smoker I took the regulator out of the system. I fired it up and got the smoker up to 400* according to the door in thermometer and down to 150* buy adjusting the needle...

    Lamar yes that is where I installed it right at the stub out in the back yard. I haven't tried it straight out of the stub with the needle valve yet. Ill give that a shot. Ill let you know how that comes out. Jim

    what the in side looked like what's for dinner. I did tent it for about 30 minutes after I took the pic. It came out moist with a hint of smoke . the boss says I can do it again . Jim

    Lamar yea I'm using plywood now propped up with bricks. I think Ill do something a little more permanent like you did. did you use sheet metal screws or pop rivets I cant tell from the pic. Jim

    guys   I think I'm going to have to add some sheet metal to the legs for wind blocks. it gets pretty windy here. today its gusting to 25-30 mph. we say it either blows from the north (in the winter) or the south (in the summer). Jim

    Guys ok 11:00 she's in the smoker running about 275*-300* I guess I'm going to have to do another mod to get the temp up higher now. and I was worried about getting too hot . I put some apple juice  in the water pan. and apple wood in the chip pan.  well we will see how she comes out. wind...

    mneeley490 Thanks I was hoping to get some tenderness /  juiciness  as well as some smoke flavor. I was unaware of the meat makeup although that makes since. I am mainly a beef and pork guy and this will be the first time trying a turkey breast in the smoker or any kind of outdoor equipment...
