Anyone use wood pellets in their MES?

Most all the food grade pellets are chipped to near dust before heat pressed and pushed through a die. They use water and sometimes soy bean oil to aid in the compression and forming stage, also to aid in the holding of form. Just like pepper, the finer the grind, the less flavor and oil is...

Anyone use wood pellets in their MES?

My lil sis has a pellet BBQ'er. I am not impressed. Last meal I had from it, I got no smokey flavor and there's no way to control heat side to side (I like cool areas of the grill and hot areas). The pellets may stay ignited, but do they impart good smokey flavor like chunks? I have seen how...

Buck Board Bacon in East Texas

Haha, believe it not, that's how it all started. I just decided to see IF I could build a rub instead of wasting perfectly good tequila on chicken. Now that I have, I have a lot of people requesting it. Even more so then my BBQ rub, Cinnamon Chili steak crusting or Chipotle Chocolate Cinnamon rub.

Buck Board Bacon in East Texas

I will do that, as soon as I get this antique printer back in working order (5 years old and it's failing?). Say, have you ever played with tequila powder? I bought 5lbs to use in my Margarita chicken rub, but the recipe only uses just over an ounce per one pound batch. At that rate I will be...

    Greetings To All Here

Thanks bauchjw. I've already looked at a bacon recipe I want to try. Once I find a bit more free time, I will offer up some of my excess spices and stuff. I bought 5lbs of tequilla powder for instance. I developed a Margarita Chicken rub, but the smallest amount of tequila powder I could buy was...

Buck Board Bacon in East Texas

Thanks Gary. I should have thought a bit more about it. I might have come up with the answer...doubt it, however. LOL Soon as I beat my printer into submission, I'll have to print the recipe and instructions out so I can get it all correct. Thanks again Gary.

Buck Board Bacon in East Texas

That looks awesome. Question, what is TQ? I love my bacon, but the store bought stuff has lost it's flavor and appeal for me. I don't know what they do to bacon these days, but there's no smokey flavor or flavor at all. Thank goodness my monster tomato growing plant died from blight in the...

    Greetings To All Here

Hello Gary S Funny you wrote. I just finished mixing up an oversized batch of my Margarita Chicken rub. I may well be making that for many years to come in the hopes of using all the powdered tequila I had to buy to make it. I'll return and check out more of your link after I finish this note.

    Homemade Pastrami Recipe?

I am wanting to get all I can on making my own pastrami. I know how to "Corn" my own beef and the step from that to Pastrami is a matter of spices. Anyone out there done a Pastrami in their Bradley before? How was it (?) and what recipe did you use? Like to also know what wood you used, how long...

    hello Fellow Bradley Smoker Fans

I found my Bradley electronic model at a discount store and ended up buying it for $50 instead of it's listed $499. How could I pass that up? Prior to that, I had a Brinkman gas smoker grill. It was okay, but nothing like the Bradley. I love mine. Yesterday I smoke roasted 6 dozen Roma tomatoes...

    Greetings To All Here

Nice place to go to. I use a Bradley smoker and my charcoal grill for all my smoking needs. If I hot smoke, it's generally the grill, but for more controlled smoking, it's the Bradley. I am always on the look out for a new cooking method or gizmo. The Bradley, I bought from a discount store for...
