    Opened it up, added the temp probe and checked the temp at 6-1/2 hours. 176 degrees.

    Thanks, Joe! I used a Sweet and Smokey Chipotle Rub I made and had leftover from some ribs I smoked a couple weeks ago.  I slathered with prepared mustard, then applied the rub. Wrapped in plastic overnight. I'll try to remember to post some pics.

    Thanks, Ray! Yes,  Nashville is a great town. I'm not a native but have been here most of my adult life. I liked it so well, most of my family has now moved here from Louisiana.  Looking forward to checking out all the great resources on SMF.
