    Mashed Potatoes

    There's a difference between red and white potatoes. White make better mashed. Another trick is add some Dukes mayonnaise to the mashed potatoes. My favorite potato is Yukon Gold.

    Fixing a Kamado gasket

    I don't know what kind of Kamado you have but clean the lip off with acetone. Use a high heat silicone on the cleaned lip and put your old gasket back on it. Here's video on a Kamado Joe. Hope that helps.

    Upside down Turkey smoke for T-day, anyone done it?

    We always cook our turkeys upside down. We flip them toward the end to brown them ( 30 to 45min depending on the bird). We use a rib rack. No problem with the skin sticking if you spray the rack with a little Pam. You're right about the bird self basting upside down. Happy Thanksgiving
