I didn't soak. I turned it up to 230 and voila! Smoke! Thanks!

Cleaned MES 30. Heats but no smoke.

I cleaned my MES 30 a week ago. It's heats fine but the chips aren't smoking. Is there a connection I might have jarred loose?

    MES control panel problems

My MES is 3 years old, sits on the deck usually covered. I wanted to use it today, 90 degrees out, (so not the cold problem) and the display panel just has 8888. It is turning on but no way to set the temp. Do I need to replace it or is there another fix?

Smoking for Two - How do you handle small batches?

I, too, am interested in doing just small batches...I have an MES and a vacuum sealer but our freezer is bursting at the seams already with grandchildren's favorites. Is the timing different if you do just a small amount? Clare

Pulled pork for luncheon ... how long to smoke??

Ok, so if I do it the day before, how long will it take to reheat at what temperature? The roaster is 18 quart electric. I could heat up in the oven and transfer to the roaster if that's best.

Pulled pork for luncheon ... how long to smoke??

Good point, I can skip the brining. I wish I didn't have to have it finished so long before it will be served but I didn't set the time of the meal. Thanks!!

Pulled pork for luncheon ... how long to smoke??

I'm making pulled pork in my MES for about 25 people for a luncheon. I have to leave to there about 9:30 a.m. and lunch will be served about noon. I have a large electric roaster to keep it hot at the venue. I'm planning to start with 18 pounds on three racks. Will brine 36 hours then rub. I...

    Shelter for my smoker

I rigged a beach umbrella by Velcroing it to the deck railing. That keeps rain from going down the vent. My husband made a sort of shelter out of rigid insulation. He made it in separate panels Velcro'd together to make it easier to store flat. We used it on Christmas here in Missouri with the...

Double Smoked Hams---Times 4 (Step by Step)

That makes perfect sense! Thanks! I'm smoking ribs for Christmas, will do this instead of putting the bacon right on top of the meat.

Double Smoked Hams---Times 4 (Step by Step)

Being new to smoking, I don't understand why you cut the fat off. Why not leave it intact on the hams? Thanks...they look delicious!

    Smoking in cold weather

I'm new to smoking and have a 30" MES. I've been very happy with the results with ribs, chicken, pork tenderloin, brats. Now it's getting cold out...we live in Missouri, so it will go down into the 30's and below. Do I need to do anything differently? Preheat longer? Cook longer? Build an...

    Winter smoke?

I have a 30" MES. Do I need to pre-heat longer and cook longer in cold weather? We're in the Kansas City area and get down in the 20's and below. I used it in 45 degrees last week and the meat wasn't done when I expected it to be. Do you all have shelters from the wind or do you just use it as...

    Treating Chops Like Ribs?

I've used "Country Style Ribs" which are boneless. Sort of a flat loin.

    Treating Chops Like Ribs?

I have done this...they take a little less than 2 hours at 225 to finish. I sprinkled them with poultry seasoning, spread with apricot jam and slices of pineapple on top since we don't like spicy.

    How Many Mes Owners Here?

We got ours from Amazon. The price was better than anywhere else, even with Prime. Happy with it so far, although it sometimes doesn't smoke as much as I'd like.

Will filling the smoker require more cooking time?

I thought that might be the case. Should I preheat to a higher temp to help heat the meat faster and then turn it down when I load it?
