after i take them out of the packaging i put them in a tupperware container in the refrigerator for a couple hours before i apply the rub. they get moist and the rub sticks well. then i let them get room temperature before i put them on the smoker.
i smoked italian sausage for the first time today. 250 degrees for 3 hours with a hot&sweet rub. came out great with an internal temperature of 180 degrees.i use a Masterbuilt electric smoker and i used a mixture of mesquite and alder chips. mouth watering good.
