    I was looking for more info on cold drying meat, though I've already tried the Alton Brown method,and saw the question asking if anyone had tried it. I assure you it works for thin strips of meat, but I'm looking for a way to do big large haunches of meat. Thinking smoking might be the way to go.

    Yes!and my family loves the stuff! We modify the process slightly by covering the air filters with game bags cut to fit.
