Pernil (Puerto Rican Style) in a Pit Barrel Cooker w/Pics.

I got a Pit Barel Cooker as an early Father's Day present.  I started off with a test run of spares using the packaged rub and store bought sauce(stubbs) and they turned out rather well. The next step was to cook a picnic roast that I got on sale.  It was 12 lbs and I was a bit worried about...

    Traeger Jr. Heat Shield?

So I found out that the other traeger grills have heat shields, but the Jr. doesn't. I have added bricks to my Jr and my next mod is a gasket, but has anyone tried adding a heat shield? I see that pellet accessories makes one, though it is a bit astronomically priced. I tried doing a search...

    Pastrami - Success or Failure?

I made pastrami, yesterday, from a corned beef brisket.  It was a nice thick flat, maybe there wasn't enough fat left on it.  At 7am, I got it out of the fridge, rinsed it, put on some mustard, and applied a rub of mostly black pepper, coriander and garlic.  I kept pretty true to Jeff's...

    Tri-Tip Roast

I cooked some tri-tip over the weekend.  I smoked them on the Traeger Jr at 180 degrees until they hit 125.  I then started up my Weber Genesis and let it preheat for 20 minutes and seared the roasts.  This was a trial run for my new maverick probe, and I think it did alright.  It's quite nice...

    White Arc Smokers

What do you guys thing of this firebox?  Expanded metal seems to be kind of pricey to begin with, and I don't have a welder.  It also comes with an ash catcher. Looks like it doesn't come with a tool for lifting the basket.  Is this just a waste of money?  It's 50 bucks plus shipping.

Buy Cheap Buy Twice... or Maybe 4 Times?

When I first got into smoking meat, i used my gas or charcoal grills with aluminum bags filled with chips. After that I got an Old Smokey, and it made pretty decent party ribs(fall off the bone), but I wanted to go for the competition style that I'd been reading about.  At that time, I bought a...

    Finally signed up.

Hello, I've been lurking on this forum off and on over the years as I've had questions and since another forum I used to visit went kaput.  It seems like Google always has a way of ending up here when I have a question, so I figure it's about time I signed up.   Regards, Brent MES Gen 1 30"...
