I used bearcarvers bacon recipe. 1 tbs of tender quick and 1 tbs of brown sugar per lb. I got the pork belly at costco already sliced into these 6 hunks. Was 5.29 lbs total. I'm thinking that with the increased surface area maybe 9 days might be too long. We shall see.

Light brown sugar white sugar and cayenne pepper. I put about 3 tbs Ina big ziploc and tossed one piece of bacon shake and bake style. Rinse and repeat.

My wife has a couple friends over so I went to costco and bought 2 nice tri tips. Covered in Jeffs TX steak rub. Gonna smoke at 230 till up to temp. Maybe crank it up at the end for a Lil sizzlie. I'll take more pics as I go.
