My wife wants me to ask this question...

What do you get a guy for Christmas that has just about every BBQ toy known to mankind? (BBQ RELATED)

Has anyone else lost their tolerance for heat?

I haven't been sick. No immunizations for years. I always liked Thai food at +3 spice. Ate my chili topped with pickled jalapeno peppers. Loved jalapeno poppers. Even ate Jamaican jerk chicken with scotch bonnet peppers. Now, suddenly, I can no longer tolerate any spicy heat. It is painful...

    Texas Red Hots

I toned down the heat. For some reason, my tolerance to hot spice has gone way down. Texas Red Hots (Heat toned down) 2 pounds beef chuck roast 2 pounds fatty pork butt 1 lb. pork fat (some people prefer brisket deckle fat) 2 tablespoons kosher salt 2 teaspoons ground cayenne pepper 1...

For you pellet heads, wood chips mixed with pellets???

I see Lone Star Grillz advertising small wood chips to mix with pellets for their grills. They have a disclaimer saying they don't know how they work with other grills. I don't think Lone Star has a monopoly on auger technology. Has anyone out there tried these oak wood chips?

    What Thanksgiving is al about...

We smoked four turkeys for a church that caters to the less fortunate. We heard from the pastor that the turkeys feed 109 smiling faces. God bless us all.

    Anybody know why this is?

I was reading instructions of a sausage recipe and it states, "Do not use metal containers or bowls for mixing." WTF?

Is there a trick to snack sticks?

It was very hard to push the meat out of my sausage stuffer into the casings through the small stuffer tube. Is there any trick, other than adding more water?

Thanks to whoever recommended Walton's sausage spice

I made a 10 pound batch today, using Holly Regular Pork Sausage seasoning. A test patty was well received by family. :emoji_boar:

    Edible collagen casings

I have never used collagen casings, only pig and sheep guts. The last batch of Polish sausage I made used 38mm hog casings. Unfortunately they are almost inedible -- very chewy. Are there any downsides with using collagen casings?

Summer Sausage using Fermento and A-MAZE-N smoker tray

I thought I'd post my step-by-step making of this recipe, in case someone has thought of making summer sausage, but may have been hesitant. This was very easy to make, and it is delicious, even if I did make it myself. Ukrainian Summer Sausage (without fermentation) Ingredients for 10 lbs. 7...

    Creekstone Farms Ribs

I purchased a few packages of St. Louis ribs and opened the first package yesterday. The ribs had a weird sulphury gas smell. I just assumed they used a preservative gas when packaging, and I went ahead and cooked the ribs. My wife thought there was a slight off taste, but I didn't perceive it...

I'm a displaced Texan in WA State, moving back to Texas this coming March. This looks like a very active forum. I hope that I can contribute in some small way.
