To continue beating the poor horse.......

Looking for guidance.... I'm 74 and have cooked on everything under the sun over the years. Very old school, charcoal and wood, meat in the same chamber with and exposed to the fire guy. However, I've experimented a good bit as well, with upright cabinets both electric and gas, offsets, custom...

My smoking life.....another dumb idea...suggestions and ridicule welcome

Folks, I've tried 'em all in 50 years of grilling and smoking. An 800 lb. steel plate behemoth offset with huge vertical cylinder....propane fired Big Block....electric Masterbuilt, and on and on. If I had the money back I spent on all this, I'd buy a new truck. I've had a lot of delicious...

    Paprika free rubs?

Anyone know of any paprika-free rub recipes for pork ribs? I don't dislike paprika really, just want a new direction in flavor. I'm not interested in anything spicy hot, either. The best ribs I've eaten over the years had no such component to their flavor. Any help or ideas appreciated as usual!

    Sudden issues with AMNPS

I have been using an AMNPS 5x8 for a couple of years now in a Masterbuilt electric smoker. Through dozens of smokes it has always been perfect, burning as intended and lasting exactly as long as described according to the quantity of pellets I load. I know how to use it, have watched the videos...

    Major MES fail

Model 20070311, about 2 years old. Has been used 15-20 times. I'm pretty sure its a Gen 1. Started a smoke at about 6:00 PM yesterday, and at 11:00 it was still heating normally at 220 degrees. When I got up this morning at about 6:30 I immediately noticed the temp was down to 82, with both...

Headed for the grocery.....first fatties today in the MES. Planning on onion and pell pepper, along with the cheese. If going to internal temp of 165, do I need to cook the vegetables any before putting them in the fattie? Thanks for the help.

    Tombigbee

Hello, all. From Alabama, 63 years old. Been fooling around fires and meat for most of my life. Have regressed from a 1200 pound plate steel behemoth wood-burner to a huge GOSM propane, and now to a MES40. Already have received some very helpful info. Look forward to learning a lot more.

    Seriously, Masterbuilt?

Maverick probe was close to center of smoker, and had been recalibrated and was dead-on. This differential or close to it remained steady for 7 hours. Anyone know if the replacement controller available from Masterbuilt customer service is really a fix, or more of the above? My smoker is a MES...

A little different MES 40 smoke question

Just acquired a MES 40 Gen 1, and have seen the many comments about insufficient smoke. When seasoning it last night, I thought the amount of smoke when running at 275° was perfect. I used the side loader with the prescribed amount of chips. My problem is that amount of chips only produces...
