Well as much sucess as I've had with ribs on my MGS30 since christmas this winter, it was time for a good friday fish smoke.
Brined in 1 cup salt, 2 cups brown sugar for 90 min.
2 hours under the fan for the pelicle to form... now into the smoker.
The only thing I'm not real happy about, is...
Well... just got done prepping for my 2nd smoke ever. Last weekend I did 3 slabs of ribs in Apple wood (I have a MGS 30). Turned out great.
Time for the brisket attempt....

Well my family was kind enough to get me a MGS 30 for x-mas.
Put the MGS together this morning, and it had a stripped/wrong insert for one of the rear legs...
No problem... nothing a 1/4" tap and an old 727 torqueflite transmission pan bolt and two #10 self tappers couldn't fix.
