    I brined a chicken yesterday in a 2.5 gallon Hefty bag (a neat trick I read on this forum) and instead of throwing it out, I turned it inside out and threw in the washer with a load of clothes. I let it air dry and Voila! Almost as good as new. I think I should be able to reuse it numerous times.

    Thoughts on electric vs. propane. Can you put wood chunks in the fire box or does it have to be chips? How about brisket? The 16 X 14 seems a little small for brisket. Thanks in advance.

    Can we agree on what temp is best? I see everywhere from 190 to 205. Does anyone trim the fat prior to smoking? There is a YouTube video where a guy swears by this and it would seem to take the rub better and there already is a lot of fat in the cut. Thanks in advance.

    I have read in a couple of places that bark causes acrid smoke. I would appreciate your comments. I have removed it, as best I can, on oak and hickory, but apple is really tough. Thanks in advance.

    Why keep the exhaust wide open?

    I have seen several people suggest you keep the exhaust wide open during smoking. I have an Oklahoma Joe's and it is a challenge to hit 225 degrees with just adjusting the intake. Can someone please explain to me why you want your exhaust wide open?

    Easier than brushing

    I was crumpling up newspapers to start the charcoal today when in occurred to me that the wads of paper could be used to remove the stalactites from the inside of the grill. Was way quicker and easier than my brush.

    Quick and easy way to soak chips

    I realized I had not soaked my chips and the smoker was ready to go. I used jar sealer for my vacuum sealer and it worked like a charm! I know this because the water level dropped two inches in a couple of minutes indicating the chips were absorbing the water.
