    Grilled Whole Duck

    Picked up two ducks at the local market. Stuffed them with oranges, blackberries, onions, and raisins. Also injected them with orange juice. Sprickled some salt, pepper, garlic powder, and cumin.

    Tomorrow I'm going to try my first meat loaf.  I was just looking at some guidence from people who have done this before on what on average I should be expecting ie cooking temp, finished cooking temp, and time.  I was planning on smoking it at 225-240 until it hit 160.  If this is off, please...

    Florida

    Hey I'm Charlie, from Long Island and live in Florida now.  I use a chargriller duo setup.  Generally prefer and blend of Hickory, Mesquite, and Cherry wood when I do ribs.  Have not done any smokes longer than six hours, so really excited for some insight from this forum.
