went to memphis in may 2013 and had a great time but one thing really stood out for me - THE GREEN EGG - the GREEN EGG people were there and were giving out samples of their chicken wings - THEY WERE AWFUL - my wife and i took one bite and were running for the nearest trash can to throw them...
wife was supposed to pull out a chuck ROAST for pulled beef but instead pulled out and defrosted 2 chuck STEAKS that were in 1 pkg from the slaughterhouse. - now their defrosted and i have to do something with them - was going to smoke them tomorrow so i need HELP PLEASE!!!!!!!!!! - THE SOONER...

ok so i lost the clip that holds the smoker probe inside smoker - i'm sure i'm not the first [or last] to do this - anybody know something i can buy at the hardware store to replace it? - i don't like it just hanging inside - thanks for the help
got some suggestions on wood for pulled beef from my BFF Chef Jimmie but i'm curious what wood others have used for pulled beef with propane gas smoker - have apple hickory mesquite chips - oak logs i could cut for chunks - thanks for your help
