Hello all I have a quick question, I have some Pork Riblets on the smoker as we speak. The smoker is holding a pretty steady temp of 250 degrees, how long should these riblets cook? Should I use the 3-2-1 meathod or is that too long? What should the internal temp be when finished? Thanks in...
So I saw this on here and had to give it a try. I took two and a half pounds of ground beef and added 2 eggs and a cup of butter garlic bread crumbs. Flattened it and added a layer of Jeffs Q sauce modified with a couple of Hawaiian ingredients and a layer of cheese. Wrapped a smoked sausage in...
Thought some of you guys would enjoy these pics. Went to a Luau last night at Paradise Cove and here are a few pics of them pulling the pig out of the ground! It cooked all day and it tasted soooo good! Enjoy!
Well, started off with removing the membrane. The gentleman on youtube makes it look simple! That was a bitch! I did manage to remove alot of it with a sharp knife. Nothing like smooth peeling though. More like picking and prodding! There has got to be an easier way.
Just found this on the internet for making my own sauce, anyone have any suggestions? I have never attempted making my own sauce and wanted to find a base sauce that I can experiment with. Would this be a good starter? What options do I have? What else could I use besides ketchup?

Well so far I have accomplished adding vents to the under side of the charcoal pan and adding a grate for the charcoal/wood to sit on. I also lowered the charcoal pan by adding legs. I like it so far, definately helps, now for a thermometer. Seems a lot of people like the ET 732 on here so I...
Well First off I have to say, drilling holes in the bottom of the charcoal pan and putting a grate inside really helps. Cant wait to lower the pan! Ok heres the goods, I got some thick spare ribs and smothered them in that Memphis rub I used for the chicken earlier and let them sit in the fridge...
So I gave chicken a try last night. I got a recipe off the internet for a memphis dry rub and whipped it up. Had to use light brown sugar instead of dark though cause I didnt have any dark brown sugar. Wrapped the legs in bacon and moked them for two hours over apple wood. Due to temp problems...
Well, Im gonna smoke some more eggs here in a bit. I am gonna move away from the way that I normally do it though in hopes of a better smoke flavor. This time I am gonna boil them first then crack the shells and smoke them for an hour that way. supposedly from everything I have read this lets...
Ok Im gonna try and smoke some ribeye steaks here in a few hours using the applewood I just got. The recipe says to rub them in salt and pepper then marinate them in red wine for an hour. Smoke them for 40 minutes then sear them on the grill for 2 minutes on each side. Sounds easy enough, Anyone...
Hello all, I just moved here about 6 months ago and finally got myself a smoker. Does nayone know where I can buy Wood for smoking on this island? I have searched quite a few places and can only find the hickory charcoal briquets. Plenty of places have the Kiawe wood chunks but I am wanting to...
Hello, I am Ray and I have been smoking on and off for about a year now so I guess you could still consider me a newbie. I am originally from Sandwich Illinois but moved to Wahiawa Hawaii (the wonderful island of Oahu) about 6 months ago. While I lived in Illinois I kind of learned on an...
