    A friend keeps my wife supplied with Trout so I Smoke some for him. He likes it SMOKEY !!!!!!!!!!! Load up the Tubes He really likes it Smokey After 5 hrs of Hickory He loved it, I did the wifes fish later with less Smoke.

    First Salami Questions

    Tried to make salami. About how long should it take to come up to proper IT? I started at 120 for an hr then 140 with smoke for an hr 155 for 2 hr w/smoke then 175 after 7.5 hrs at 175 IT was 145. After that I was tired and upset so I bumped it to 225 to finish. Thanks for any thoughts.
