I see a lot of people say to wrap a butt in foil at 165?? Is this for time.. The reason I ask is I have a cheater smoker (electric) that keeps a constant time. If I put 16 pounds - 2 8 pounds.. Do I really need to wrap it or give time to work its way up. I like a bark.

Admitted Novice on the smoker..... What I learned is not to rush the process. Cherry Wood has turned out to be just awesome on pork but. I have heard several therory's on resting it. Whats the best way to rest this thing once I get it to 200. Mainly do I wrap it in foil? How long?
Excited about the shoulder i have got going. I was concerned about the time it took. It thought it was going to fast. Now I am worried that its going to slow. I have had a 7 pound shoulder in there for 10 1/2 hours at 225. I am stuck at 189. I hoping it get to 200 but how long you think.
