How to cut a turkey in half

Is there any special way to do this If I have a larger turkey that I want to smoke? Also, could I spatchcock it and just cut it in half that way?  The spatchcock method sounds good but I don't think the turkey will fit laid down in my 18" WSM.

    Need help with starting WSM

I did my first smoke on my older WSM a picked up off craigslist yesterday on a turkey and I think it was a success but still had issues.  I filled the basket with charcoal and added some hickory lumps and apple chips as well.(Couldn't find any apple chunks yet) I think my first issue was when I...

    My $60 WSM

Picked it up off craigslist for $20. Cleaned it off and replaced the cooking grates, new water pan, side door and dampers. Its an old model with a wooden handle. Best $60 ever! I'm gonna practice smoking a turkey this weekend.

    Kamado reviews

I'm looking to take a dive into charcoal smoking.  I have a GOSM that I'll probably sell if I find a good alternative.  I see that there's an offbrand BGE named Kamado at my local Sams Club.  I'm just not sure of the quality or ease of use, etc.  I love the fact that it's so well insulated that...

    Wood flareups

I'm using my GOSM propane smoker and have been having issues with my wood chunks flaring up and catching fire.  This obviously produces a lot of smoke and seems to hinder the smoking/flavor of what i'm making.  Is there anything I can do to prevent this?  I tried foiling my wood tray and poking...

    Smoked my first brisket (pic)

To be honest I didn't plan on posting on here, but after my results I wanted to share :)  I've lurked here for a few days trying to get all the pointers I could get.  I smoked a chicken earlier in the week with decent results, so I decided to go with a brisket for my wife's baby shower.  Here's...
