    Unhappy with my short ribs

I have eaten short ribs cooked by others and loved them, soft, tender, litterally falling apart, intensely beefy.  I wanted to give them a try for a pot luck at work.  I use a Southern Pride DH-65 electric water smoker I bought as restaurant surplus, intending to eventually open my own place...

    Mixed Bag

As many have decued or been told outright, I've got a Southern Pride DH-65 and I'm developing my procedures for a take-out.  As such, I'm not able to smoke one meat at a time like I would have before in my small backyard smoker.  So I am interested in your strategies for smoking mutliple meats...

    Big Changes

Hello All, I haven't posted much, but I've learned a lot. I thought I would share some of my experiences and, oh yeah, a pic. So the pic is my new (used) Southern Pride DH-65 on it's first run in it's new home, my home.  I have a 10 lbs brisket flat cut into 3 roasts to test 3 different rubs...

    New in the Northwest

Good Morning, I stumbled on this forum looking for info on Belgian Blue beef brisket, and stayed when I saw some of the recipes and comments on the FEC100 smoker.  It looks like a great resource so I joined up and decided to stay. I'm really interested in hearing about all things smoke.  Oh...
