    Thank you folks for the help.

    Well we did the baby back ribs at a recommended 275 degrees. My compliments as they were pretty good. Next Princess is looking for a nice Pork butt or two and more baby backs. Our son, who hands out all the advice needed has said " gotta do at least two butts and four ribs at a time". Uh huh...

    How come mine don't look like that?

    I have a new 24 inch camp chef smoker and first time we used it the wind kept blowing the flame out. Between relightings we almost saved a nice pork butt. So we moved the smoker to a sheltered location and tomorrow we do two racks of baby back ribs. I am reading 225 and 275 as the suggested...
