Davy Crockett grill temp stuck at 50 degrees - broken thermal unit?

Cutting into pork butt smells terrible - is that normal?
Smoked my first pork butt yesterday and it turned out great! But when I cut into it and started shredding, it kept releasing foul fart-like smell. ...Is that normal? Don't mind the hole in the top. I got curious and pulled a piece to try :). -

I'm smoking my first salmon using this Youtube video's recipe. I'm smoking on a GMG Davy Crockett. What's that yellow gunk oozing out? Should I remove it? Keep it?
