HI everyone its been A long time since Ive been on this site and even longer since ive smoked anything, shame on me. I am smoking A picnic shoulder and i got the temp up to 188 and i forget what temp it is supposed to be for pulling. can someone please help me out?

Im smoking my first picnic shoulder on my ecb.I coated it with mustard and caynene pepper salt black pepper and garlic powder. I put it on today at 12 o clock I hadnt checked the temp yet.It is about 8 lbs I expext it to be done around 11 o clock tonight (I hope anyway got to get to bed for work...
I'm fixing to smoke my first smoked backstrap stuffed with beer brats and cheese. Thanks for the idea possumgritz. Do you think it is necesary to pre cook the brats before i put on smoker? I'll have q-veiws later.
my wife is from california and they are big on smoking tri tip and she wants me to do one but we live in ga. and the closet thing i can find is sirloin tip is this meat as good to smoke as tri tip?
