Up till now I have only ever done a single meat at a time on the WSM 18".
So I decided I'd just go for it and try THREE different meats.
Brisket, Ribs and Chicken. All 'at the same time' and ready to eat at 7pm (ish)

So my local has properly hooked me up with 3.4kgs (7.5lbs) of Beef Ribs.
These things look crazy!

Few questions......
1) Should I cut these in half, length ways (or any other way) and let me do two (or more) hot smokes?

Quickly realising that my cold smoker, as good as it is, just isn't going to work as a hot smoker.
So looking into possibilities.
I would prefer to buy a better 2nd hand one, than a new one that is not as good for the same price.
