Why does smoked cheese taste like an ashtray immediately after smoking?

Why does smoked cheese taste like an ashtray immediately after smoking?  I mean, this doesn't happen with meat, but with cheese, why does it take weeks to months for that ashtray taste to mellow out?

Cheap vacuum bags not being evacuated

I have a Foodsaver 3880 vacuum sealer that I bought from Costco a couple of years ago.  I have some el cheapo vacuum bags that I bought for this that were "supposed" to work, but they really don't.  The mesh isn't deep enough on the bags, and thus, the air isn't really evacuated very well at...

    Costo Double Pack Pork Butts

I have a question about the double pack of pork butts that you can get at Costco.  Yes, I know they are boneless.  When you open it up, are they individually cryo-packed?  As in, is each one sealed separately, or is it two butts in one vacuum pack?  I'd like to smoke one, and freeze one, but how...

Cost Comparison - Electric versus Charcoal

I remember seeing a thread awhile ago about cost comparison of electric smoking versus charcoal, but can't find it now.  What's the breakdown, which is more economical to smoke with?

Check your stores for display models for sales

I was shopping at my local big box Wally World store today, and saw this floor model of the Weber 14.5 Smokey Mountain. It was marked $154.  No instructions. No cover.  With a couple of scratches here and there on the lid.  It was the last one in the store.  I said how low could you go?  The...

Electric versus Charcoal - Taste Difference

I have a MES 30" smoker that I've used all summer.  It makes good tasting food, and I'm pleased with the results.  Am curious how the taste of finished meat in a charcoal smoker tastes compared to an electric smoker.  Is it the same?  Or is it better?  It's just my wife and myself, so don't need...

    Confused about water pan

I'm newer to smoking, but am confused about the water pan.  I have a MES 30" smoker, and use the Amazen Pellet Smoker, and the recommendation is to not use a water pan with that setup.  What exactly does the water pan do, and what am I missing by not using it for my smokes?  If I don't use a...

    How important is temperature

How important is actual cooking temp? I mean, I see a lot of debate about 225, 240, 275, etc. Is it really that critical? Is 225 in 8 hours the same as 240 in 7 1/2?

    Smoking today, Eating tomorrow

I put in an 8lb pork butt last night and it should finish about 9 am this morning (it's about 185 internal right now).  But, we're not eating it until 6pm on Sunday.  You might ask why did I smoke it so early, simply, because of my work schedule this weekend, my only choice was to smoke it...

Smoking 2nd Brisket - When to Pull

Smoked my first 5lb brisket flat a couple of weeks ago.  Cooked to internal temp of 198, but it was still kind of tough when eating.  I tried inserting a probe to test for doneness, but since it was my first one, I didn't really know what it was supposed to feel like.  Letting the brisket rest...

Smoked First Pork Butt, Maybe too much smoke

Is there any way to salvage meat that might have too much smoke?  I smoked my first pork butt today, a 7 lb bone-in butt, in my MES Gen 1 30" smoker.  Used the AMNPS with the Pittmaster pellets.  Had thin blue smoke when I started at 5 am, then left to go for a run for a couple of hours.  Came...

    Doing my first Brisket

I'm doing my first brisket tonight.  We want this to be done for lunch tomorrow, so I'm starting it about midnight.  Bought a 6lb brisket flat at Costco.  Going to rub it with salt and pepper, and put it in a MES 30".  Planning on a smoke for 1 1/2 hours per pound, and then some rest time after...

    New MES 30"

The smoker arrived yesterday. Unboxed it last night before bed, then got everything else ready, including my AMPNS and my Maverick ET733.  I'm doing the 3-hour burn-in right now, and the ribs will go in right after that.  My wife was so excited, she already invited her parents over for dinner. ...

    Propane or Butane torch

I will be buying a torch in the near future to light my AMNPS.  I don't have a propane or butane torch, starting from scratch.  Which is better for lighting pellets?  Is one preferred over the other?  Thanks.  At my local big box hardware store (Menards), the propane self ignite torch kit is $15...

Is MES 30" wide enough for racks of ribs?

Looking to get into smoking meat as a new hobby.  Thinking about going the MES/AMNPS route, looking at the 30" Gen 1 model without a window, mainly because of budget.  It seems to be a good machine, especially for beginners.  Am concerned whether or not it fits a whole rack of ribs.  The Costco...

Saying Hi, ready to get into BBQ!

Hello, just saying hi.  Ready to get into BBQ'ing.  Looking at smoker options, have my eye on an MES 30", although still debating if I should go with a 40" instead.  Just the wife and I, daughter is off at college and won't be around to eat much, so part of the reason why I'm still debating...
