alright, im going to keep my smoker at 250 use mesquite and apple wrap in bacon, stuff with garlic and bacon peices smoke for 2-3 hours, wrap in foil and bring it to 135*. q view and comments by end of day.

thin blue smoke at all times is key. you might want to go to the other extreme on your next go around, try apple or cherry wood and only use one good sized chunk or two tops and wrap it in foil sooner than you did. worst case: not enough smoke, but still edible. good luck and make sure you do...

yeah, im in orange county i work in irvine and am very close to the santiago fire that is up to 18000 acres! half the people i know have had to evacuate! lots of people have to work to pay the rediculous costs of living out here and dont have a choice but to work most everyday(like tradesmen)...
