    Hi - first post! I am relatively new to smoking. Got a Brinkmann Gourmet for free two years ago and have loved cooking on it. Mostly pork ribs, but I have done a few butts, a few turkeys, bacon, and today tried a small chunk of brisket (whiteout snow this afternoon has messed that up a bit)...
