    Another "I got a smoker for Christmas" guy here

    Thank you for the kind welcomes. That brisket smoked for 9 hours yesterday then 2 more hours today before it was done, didn't expect an 11 hour cook time for such a small piece. Sure was good though! Started an 8.5 pound flat today, should make for a nice New Years Eve dinner.

    The wife got me a MES 30 for Christmas and after reading about 50 threads here on brisket I got a 3.5 pound flat from Costco going today. For me brisket, prime rib, and jerky are the big 3.
