General rule is 1 tbsp per lb. If you like bold flavor, you will definitely need more but yes, like you said, it is a matter of your preference- kingmadejerky

Black Pepper Jerky
I have tried this in the past with our jerky as well. Honestly, the best solution we found was to use less smoke chips. Much less. Let me know if you give that a try. Would love to hear the results- kingmadejerky
