Yup, put it in at 730 and it finished up at 330. 275 almost the whole way. The temp did get down to 250 and up to 300 a few times but only for a few minutes. I'm still figuring out this new pit. I wasn't going to check on it until 430 but just said what the heck and opened up the lid and it felt...
Brisket turned out great. Everyone got seconds; even the kids that are usually picky. It took 8 hrs to get to 210 degrees. I wasn't trying to get that high temp. But it rested for 2 hrs. Everybody was hungry so I didn't get a chance to take the final pic. But here's a pic of the leftovers.
This is four hours in. I opened up the smoker to give the brisket a little spritz. Brisket accumulated a little puddle at the flat. Hm?
BTW using post oak.
Well, here goes nothing. My first brisket smoke on this smoker. It's a 9lb brisket. Just good Ol salt and pepper. Been keeping it(or trying to keep it at 275) put it in the smoker at 730 this morning.
I'll post some pics. I only took the beginning pics. My Ol lady and sister took the end result so I'll wait till I get the pics from them so I can post them.
Thanks Joe. It shouldn't be very cold. I think I'll just give it a shot. Plus my pop said he MIGHT just bring a canopy when he comes over(he's convinced it will not rain). I'll post pics tomorrow...or take them at least and post them when I get a chance.
I thought about the pop up this morning. I really didn't want to get one. It's probably the best thing though. Thanks for the advice. I think what I'll do is play it by ear and hope it doesn't rain. If rain falls and my smoker gets wet will it prolong my cook?
There is rain in the forecast on thanksgiving day and I was planning on smoking my turkey. I have a offset side smoker. Should I just cook my turkey in the oven? Any advice?
Ah Hoity, Retama is where you'll most likely run into me. I'm there pretty often. I typically win $100 almost every time I go. I say almost cause I do have my bad nights there also.
LOL rabbithutch, That's what I tell everyone who wants to come visit me from out of state. Don't come in the summer! A friend of mine from California was trying to convince his wife to move down here to SA and made the mistake of visiting in the summer. I warned him! They just bought a house in...
Hello Hoity,
I'm out in the New Braunfels area pretty often. It's not to far of drive from where I live. Technically, I live in Live Oak right off of I35 and 1604. Seeing that you like Mexican food I would suggest trying Thousand Oaks Café on...well Thousand Oaks Rd lol. Actually, I think they...
Thanks for the warm welcome.Love the Alamo. Pass by The Alamo every so often and even though I seen it hundreds of times it still amazes me every time I see it.
Glad to be here Joe. Lookin forward to seeing how everyone else is smoking and getting a few pointers from some experienced smokers. I've done my share of smoking meats in the past, but I don't think I ever payed quite enough attention to temps, woods, rubs, or any other techniques.
I guess I...
I am new to SMF. Here are pics of my build from the beginning to end. My welding skills aren't the best but they get the job done. I started with two 20 inch pipes 3/16 thick. I cut one for the firebox and then welded the ends out of 3/16 plate. Then I welded them together. Got it on legs.Cut...
