Just threw first butt on the smoker

Giving credit where it's due on those. I think there must be something in the water up there. I had a friend from Whitehouse I met at SFA, and he had some great dishes he used to whip up. I miss my days out in East Texas! Beats the hustle and bustle down here any day.

Newbie struggling with meat cut selection!

That's great advice Lemans thanks. I'm trying to make sure I don't mess up on a more expensive piece of meat. So I am glad you shared that. I knew there was a specific way to split a brisket, and I love burnt ends. So win win.

Newbie struggling with meat cut selection!

Thanks AK, do you smoke briskets? By cutting them down do you have to worry about which areas of the flat and point to keep together or apart?

    First smoke on new ECB

Hey all, Last weekend I broke in my new ECB with a rack of spare ribs. Ribs turned out pretty darn good. I have to say I was pretty impressed. It has been years since I had even been around a smoker at all. I am fairly new besides helping out friends years ago and this is the first smoker I...
