First MES Gen 2.5 Smoke
Got my first two ribs in the 40" MES, Gen 2.5. I spent a few hours yesterday breaking the thing in and understanding how it manages temperature / smoke. This is an attempt to use wood chips rather than a tube smoker, but I have an idea to at some point rig a tube smoker into the wood chip...- randys01
