First Time Dry Aging Help
Hi, I have just completed doing my first ever dry age. Used Misty Gully Bags (Same thing as Umai bags). Now i aged a 3.7kg piece of sco tch for 25 days in my fridge. Now when i took it out of the bag, it had a strong blue cheese odour. Is this normal? The next day i cut it up into steaks... -
