    How do you cook your dry aged steak?

    Saturday is the day barring any obstacles! My soon to be 31 day dry aged Umai bag ribeye will be ready for devouring. How do you all cook your steaks? Grilling really isn't an option but I have a cast iron pan and a Sous vide IC. I want the best damn steak possible so what would you do? TIA!

    Hello everyone! I'm new to the group so I thought I'd share what I currently have going in my fridge. 1- ribeye dry aging. 28 days tomorrow. 2- pancetta initial curing, will bag tomorrow 3-capicola initial curing, will bag April 15 (14 days, not sure if I should go 21?)
