I’m pretty confident all the water is out. I filtered it a few times and the last one took it to around 275 degrees and the oil was stable with no bubbling. It smells fine and looks good. It’s just almost a runny consistency that I can pour out of the jar.
Just started to use our brisket trimming (we have a lot) to make tallow. Everything seems to go well, but I’m curious as to what the consistency is supposed to be at room temp (70-75 degrees). In the cooler it’s solid, but mine is pretty soft at room temp.

Are your tests being done under heat or just at room temp? I ask as mine were always done during actual smoker runs. Yesterday I decided to do one with the probes just sitting out on my desk with the Gateway left where it normally is.

It's possible the first batches were not as good. Mine are 7177, 7088, 7089, 7090. I have my second order showing up in a week or two so I'm curious to see how those do.
I updated to that firmware today and so far tonight I have one probe that gave a low battery warning after 2.5 hours. 2 at 80% and one that won’t communicate. All probes say poor signal and they’re no more than 20’ from the gateway.

My probe firmware version is 1.2.1. I’ll ask and see what they say on that one. To me it seems like more of a problem with the probes and not the gateway.
Right now the transmission from the probe to the gateway is based on the temperature change setting. Options are from 1-3 degrees F. This should actually extend battery life as it’s only sending info to the gateway when the temperature changes based on your setting. I have mine set to 3 degrees...
Support just confirmed with me that 1.1.26-44 is the newest firmware for the gateway and 1.61.6+385 is the newest for the phone app. Both are the versions I was on while having battery issues and they still persist.
No further instruction from support at this time for me.
Let me know if this works for anyone. I've tried it several times by removing it and even removing everything and deleting the app and reinstalling it all. I've also held down the button until it flashes red and added it to my account. My firmware version will not change from 1.1.26-44.
