Just a couple of ideas for ya, these are basically the same ingredients of the street taco but you just roll it can cut it....Nice for a wedding party. Crock pot shredded chicken is also a good thing to beef and or pulled pork.
This one has both chicken and beef.

Much appreciated Brian and we often do Queso dip with these Mrs C makes some with white American and we it usually gets added inside the enchilada and some over the top under the grated...It adds a different tone to it but is very tasty that way!

I’m usually a slow thaw in the fridge so I can dry brine but for these dry aged they don’t need much INT so this allows for a hard sear…. It also quick…. I often put frozen beef and pork ribs right on the smoker as well…..

Those look tasty Brian! And yes having the mop sauce hot is a very good thing, when I glaze I keep the sauce in a low burner on the stove. Some of the best st L ribs I’ve done and had at a bbq place was hot and fast @ 350, I do mine at 275 - 295 and they are a 3.5 to 4 hour cook only!
