    I agree. I buy Costco butts if I'm making sausage, but otherwise I'll look for sales elsewhere and trim or debone myself. The Costco ones always look like they were deboned with a dull axe.

    Thanks, folks! I froze about a pound of the meat mixture, so I'll be making them again soon. Looks like we're playing the Rams on Sunday for the 3rd time this season. Even if I wasn't partial to the Hawks, I wouldn't be Rams fan. Sean McVay just rubs me the wrong way.

    Been running at 230° for 2 hours now. Cranked up to 300° for the last half hour, then will sauce again and let it go another 10 minutes. Forgot to mention that I use 1 c. of my own bbq sauce instead of ketchup for the beans. Makes all the difference in the world, according to folks who've tried it.
