    Featured Friday Night Baby Backs!

Thanks for the update on the amounts. I'm absolutely giving this a try! And saving it as a modified version of Jeff's Rib Rub in my index.

    Sad News, BBQ's Stolen

Yeah, if the police don't seem interested, just tell 'em you and your buddies are headed over there with ball bats and we don't need the police anymore. They will beat you there for sure. Sort of a revised version of "the bodies are in the back yard" joke...

Just a heads up next time you out to eat...

Yep, I look at a salad as the "steak tax" to be paid before the joy to follow!!!!

    Double Smoked Carving Ham

Looks great Disco. I had one of those for Thanksgiving this year. We get them from Boars Head down here in the Southern USA. I like a simple glaze of 50% butter, 50% honey, and a couple of splashes of Bourbon (based on the volume of butter & honey and size of your ham). I glaze for about the...

    Featured Friday Night Baby Backs!

Wow, that looks amazing. By "doubled the base spices", I presume you mean the Paprika and everything below that in the recipe, correct? Ie, a cup of Paprika, etc... in your version.

Can we not post photos to our signatures?

Ok, I'm posting a smaller version so I can link it to my signature. Takes up less real estate on the posts.

    What are you watching ?

If you like police chases, check out the YouTube channels for "State Boyzzz" and "County Boyzzz". One is mostly GA State Patrol chases, and the other is mostly Clayton County S/O (southside of Atlanta). Both will PIT you in a heartbeat and speed does not matter.

    Been away a while.

Photon torpedo's - I like the sound of that!

    New pit - Humphrey's Pint

Ok, finally got around to getting the new smoker seasoned. Some of you had asked for photos of the pit, so here they are. This is the last time you will ever seen this pit this clean (just prior to the seasoning layer). The photos don't give true justice to the beauty of the color. It's...

    Ground Beef Jerky question

Here are the scales I have. My Spice and cure scale is an "American Weight Scales Scalemate SM-501". I also have their 100 gram calibration weight. My process is turn on the scale, put the weight on the plate, if it weighs 100.00 grams, good to go. Weigh all my spices, then at the end, put...

    Ground Beef Jerky question

Yes, you can use Cure #1 or "Prague Powder #1" (same thing) to add to a spice mix you put together. Use it at a rate of 1.13 grams per pound of your meat. And if you are mixing your own spices, spend $25 on Amazon and get a scale that will weigh with a resolution of 0.01 grams (1/100th of a...

Can we not post photos to our signatures?

I have a premier membership. The image option only shows a URL link, and not a local upload. But I found a way around it so to speak....

Home Help. Is this weight bearing?

As I understand it you want to extend the stairway drywall to have a clean opening at the bottom the stairs. Just drywall out of the stairs and a clean drywall corner into that basement area. Correct? I would not mess with those 2x4's, especially since they appear to be a double set, and it's...

    Any other SMF Bourbon/Whiskey "enthusiasts"?

My meager collection pales to some of those photos. This is the most "rare" thing I currently have and my only allocated bourbon right now.

Best Blender for Smoothies, Need Your Advice

We bought a Blendtec Classic about 10 or 12 years ago. Love it. Built like a tank and the commercial design will last longer than either of us will. My daughter bought one and she went with a refurbished one direct from Blendtec. No problems and saved a good bit of money vs new. I also have...

    Boston Butts @ Aldi's

Kroger runs them for $1.69 a pound every so often around here. I just checked and for me, Sam's Club is $2.38 a pound and Restaurant Depot is $1.99 for bone in and $2.38 for boneless. I till have a few double butt cryo-pac's in the freezer from the last sale at $0.99. Have not seen that price...

    Snack sticks on racks

I forgot to add this earlier, but like I said, I never tie my sticks casings. I make the sticks as long as I can to fit my smoker racks anyway. After smoking and cooling, I trim the two open ends clean, and, I cut each long stick into 3 nice clean cut sticks for vac packing or eating. The...
