    picnic shoulder

Absolutely. If I'm feeding a lot of people and want to stretch my dollars, I'll use 2 picnics for each butt i smoke. If I'm just feeding family or close friends, I use strictly butts. Just a personal preference.

    Christmas Party spare ribs platter

LOL... try this.... when you pull your ribs, lightly sauce if ya want and then wrap in foil and let sit for a bit, then cut. Just remember not to use a sawing motion, just push the knife right through the meat.

making 3 pork butts.. need some help!!

At that temperature, it will be close to 1.5 hours per lb. Since you have three separate pieces, just take the heaviest and multiply by 1.5 hours. However, in my experience, when smoking more then one piece of meat, don't be surprised if one takes an hour or more then the rest. So yeah, I agree...

    Brinkmann Vertical temperature

Your smoker got over 170, especially if you had to fill the water bowl two times. water doesn't boil until it hits 212. Chances are the thermometer that came with the smoker is not accurate. Do you have the cheap water smoker or the square one with 4 legs?

    Pork butt marinade

I've used Mojo on tenderloins and BB's before and it was awesome. About $2.25 a bottle on the Spanish food aisle. :) I may have to inject a butt with some and see how it comes out. It may change my mind.

    Salt Free Ribs

I was thinking last night about how our Dr's would cringe if they knew our hobbies. I love meat and I love to grill and smoke. I wonder how many take vitorin or other cholesterol or blood pressure medication and still grill with reckless abandon? I know I do. I'd like to hear from a member...

    Salt Free Ribs

You can certainly make a great rub that is salt free. Just make sure the ribs you buy are fresh and do not contain a solution, which would contain sodium. You can make up a similar rub that will be salt free and serve the ribs dry. 2 parts brown sugar 3 parts paprika 1 part dried parsley 1...

    Pork butt marinade

Marinade is usually reserved for lean cuts of meat that need tenderizing and flavor. The pork butt has a huge amount of flavor and the rendered fat and collagen make it one of the most tender pieces. Just get the internal up to 205 degrees F. I imagine you certainly could marinate them, but...

Pork Butt - Defrosting and Injecting

We have a lot of radio ads in our area for Sailor Jerry's spiced rum. Seems knock off's of the Capt aren't rare. :)

    Menu Ideas ????

When it comes to opening a restaurant, I'm no expert but I do know a thing or two about college kids. Comfort food will not be a huge hit on it's own. Sure, some would like it from time to time, however college kids that are no longer living at home are free to eat as they please and the...

If you want to kick it up a notch, and who doesn't? How about serving it with some tropical chutney? It is easy to make and makes a wonderful complement to pork and it makes for a great presentation. 1 tomato diced 1/4 cup finely diced mango 1/4 cup finely diced pineapple 1/4 cup cilantro...

    CHAR-GRILLER DUO questions

You got a nice grill/smoker there. I got to cook on one on Labor Day and have been contemplating getting one. As for the cover, I'll ask my buddy. He has the cover and the side burner. We are going to add the fire box, but should be able to tell by looking at the cover myself. I'll get back to...

    Christmas Party spare ribs platter

A very sharp knife. I try not to slice cut, I push the blade through the meat. I am blessed to have a brother who knows I love to cook and he bought me a beautiful two piece Calphalon knife set last Christmas. I also found that the meat will cut easier if you let it set up for 15-20 minutes...

    BJ's Wholesale Club price alert!

I went back to the website to print some more coupons and the McCormick one is gone. I believe coupons have cycled. I was able to find a $1 off on a food blog that hasn't expired. Just a quick update. At $5.95 per, this is still a great bargain and high quality rub. After Dec 31st, it goes to...
