Looks good, what's in 'er? I did the same fat wall fatty my first time too. It takes practice, and I'm willing to keep trying. Every time I screw one up, I eat it myself because I would feel bad if a gave anyone a bad fatty.

We need more info to help you. If you could answer these questions we could start giving you some helpfel tips.
1) What kind of smoker?
2) Are you getting the temp from a stock thermometer or one you added, and is it at the lid or at the grate?
3) What kind of charcoal are you using?
If it tastes half as good as it looks, it's gone by now. I don't use 'squite much, but I can see how it would be good with sausage. I'll have to try sometime.
