    You do not want a smoldering fire....i.e. a fire that is not getting enough air. If you are using an offset rig leave the stack damper and the firebox damper full open always.     Here is Saturdays rib smoke.. A hit as usual. I sold the first four racks (cut up it to 2 rib sections) to a fella having a dinner party. He said that everyone loved them!! The other 3 racks my family and I ate. They were good! Happy holidays, Justin
