I bought a kit this weekend, But i was wondering it i could have rigged up something myself...
plus i wanted to start off with a small batch maybe 2 - 2 1/2 gal.
I tried the Wok, but i only got maybe an 1 hr and a 1/2 burn time on each dump... To me thats way too much babysitting.
So I made a firebox, and now i can get a 6hr burn unattended. ;-) more time to drink some beer and talk some trash. And i use the charcoal pan as my ashpan ;-)

Dont get me wrong I love Ribs, Butts and Bacon and Chicken
And i'm not a reallly a beef eater.

Now mind you i live near Philly.
That what i'm looking for, That WOW! factor. My ribs are pretty good as friends and family tell me, But i'm still looking for that prefect rib.
Now i put my brown sugar on right after my rubs, than i wait til its melted or becomes syrupy then smoke.
