On the left side of the screen you can find a time/temp. table. Its really handy. I use it all the time to keep my little brain straight. Good luck. Table says a 12 lb turkey is 6.5 hr and internel temp of 170. Hope this helps.
I agree. If your plan is to be down on the Plaza, Jack's is good. Bring the arm and leg. Glad your going avoid Arthur Bryants, who the hell thinks thats good BBQ anyway.
Look to left side of the screen. You can find a temp. table. This table is very helpful. It suggests internal temps for sliced and pulled pork . Check it out. I think your temps are fine. Enjoy and good luck. Foiling the butts is a nice touch. Research around. Every smoke is a learning...
