    Just thought I'd post an update on this. I got my grinder today, and the plate sizes are: Fine - 3/16" Med - 21\64" (a bit larger than 5/16) Coarse - 3\8" I did get the 3/4" from Butcher & Packer too.

    Yeah....venison burgers would be great for the beef fat.....but I'd need some stinkin venison first! I did not see one deer this season, but I was working 12 hour days during most of deer season. Saw five in my back yard last week though.

    It depends....most of the cryo-vac stuff gets rinsed. Most other stuff....sometimes. A funny story though.....I know a lady that washes her boneless chicken breasts in the sink...with soap!

    When you guys trim up meats for other cooks....do you save the trimmings and fat scraps? I trimmed up a 4lb chuck roast yesterday for some soup....and I saved the fat and trimmings in case I might need some extra fat for sausage. I have 10lb of pork loin that is soon to become Canadian...

    I helped my buddy fell a bunch of trees on his farm yesterday. In return I got a bunch of apple, maple, oak, peach, and hickory logs! All ranging from 2-6" diam. Now all I gotta do is keep them separate and let 'em dry. Oh yeah...some cherry too.....a nice score for sure! And he gets to reap...

    More burn for your buck

    I burn chunks all the time in my GOSM. I have the smaller GOSM...and the cast iron wood pan is about 8"x8" or so. I fill it up with as many chunks as I can....doesn't matter if the top won't fit tight against the bottom either. As the chunks burn away, I add more as needed. I leave whats already...
